The first decaf is finally here! :D Perfect if you have problems with caffeine or simply enjoy a cup of good coffee in the evening that won't keep you up all night!

Sheka

The coffee comes from the Sheka region, which is so diverse and biodiverse that it is a UN-protected biosphere. The coffee here is grown in complete harmony with nature and sustainably. The fair price the coffee farmers receive for their coffee keeps them from having to pursue illegal means to make ends meet, such as illegal deforestation.

The coffee has interesting flavors of range blossom, nectarine, and chocolate. I roast this coffee quite light as to preserve it great taste.

Sugar Cane Decaf – How does it work?

The sugar cane process for decaffeinating coffee is a natural and flavor-preserving process.

The green beans are first soaked in hot water, causing all soluble substances such as caffeine and aromas to pass into the water. This water is then run through a filter filled with a byproduct of sugar cane. This sugar cane product is responsible for binding the caffeine from the water without extracting the flavor compounds. The beans are then returned to this water to re-hydrate and reabsorb the flavor compounds before being dried.

Decaf is more expensive than regular coffee for the simple reason that it is a labor-intensive and time-consuming process. If you have any questions, don't hesitate to ask me! Keep in mind that even in decaf, a little caffeine always remains. Typically that is 2–5mg per cup compared to around 95mg in a "regular" cup of coffee.
